Ashleigh Moolman-Pasio's favourite rest day breakfast
On rest days, I like to mix up my breakfast compared to my usual oats/muesli. This is one I like making from time to time.

Banana Pancakes
2 eggs
1 Banana
1/2 cup Oats
1/4 cup Apple Sauce
1 tsp Vanilla
1/2 tsp Cinnamon
1. Blend oats in food processor until ground
2. Add other ingredients
3. Mix until blended
4. Cook on non-stick pan
5. Stack with goats yoghurt and honey between layers.
6. Sprinkle walnuts on top and enjoy
